I cut two bones off of each end of each slab. I use these hooks to hang six of them trimmed like this on my hybrid hanging grate and add the cutoffs to the top rack. Smoke at 250-275 for 2.5 hrs each round. Wrap at 170 and rest after 195-200. I repeat this until I’m finished with the whole case of ribs. The Hunsaker Vortex is an absolutely foolproof system to produce the best quality of barbecue. Pulled pork? No problem. There’s room for two pork shoulders on the lower rack while you’re smoking the ribs at the same time. The whole process takes about 7-8 hours and feeds more than 30 people with tons to take home. The Hunsaker is not cheap in any sense. It’s industrial grade construction intended for competition level cooking. It leaves big box cookers behind. When you’re ready to get serious about barbecue this is the way to go. There’s an awesome FB community ready and willing to help with good answers and good advice. Best purchase of the year.
