Two pack of silicone grommets. These grommets are designed to allow meat probes to go through the smoker into the meat.

Pack of 2 silicone grommets
Installation tools needed:
1/8" drill bit
1.25" hole saw
Electric drill
Installation is straightforward. Simply mark the center of where you would like the grommet and drill a small pilot hole (1/8" works). Then using a 1.25" hole saw drill the hole. When installing the grommet it helps to start at the top and work your way around the hole.
