Due to work schedule I am seasoning today and planning on short ribs for Thursday as my first cook
I was using a different option with my 22.5 wsm.
due to the heat deflector "firedial" being immediately below the bottom rack rendered it extra hot.
I purchased their 5 position rack holders and firebasket.
Theirs probably about a 3.5" gap or so from their heat deflector to the lowest rack.
I installed this and I got about 20-30F° difference from lowest rack to top rack anywhere between 180F° and 300F°.
This makes all 5 rack heights utalizable.
Opening the lid with a fire running you can see the smoke swirl as advertised.
I ordered the Vortex Charcoal Basket and the Rib Hanger Set for my 22 inch WSM. Hung two baby back ribs and one whole chicken. Did not use the water pan. So I'm thinking this meat is going to burn up. I do use the Thermo Works SmokeX to monitor the temperature of the meat and air temp too. Temperature was at 325 degrees. To my surprise the meats did not burn. Even the smaller ends of the ribs that were hanging down did not burn. All my family could not believe how much better the flavor was compared to the traditional WSM with water pan. I am now going to purchase the 55 Gallon smoker and retire the WSM.
I’ve only used it once so far but it performs flawlessly, great concept and very high quality
