With the stock WSM I could barely get to smoke temperature in the sun on a summer day. Today I seasoned the vortex basket and tried it out on a 50 degree overcast day. So much heat! Now I have to work on my charcoal game and start using the snake method to get better control of the temperature and keep it in the smoke zone.
I recently upgraded to a Weber Smokey Mountain 22” and seasoned it… while seasoning i had a hard time getting temps on lid above 250. I added the Hunsaker hinge and remote sensor holder ( great products ) and the vortex charcoal basket. Today i sprayed it down with canola oil and set to season it. i was worried about getting temps to 300… Um, no worries at all… that vortex CB is like a turbine. i emailed and was asked to call by Mark! He gave me all the info i needed to lock the grill in at 300 for the seasoning and now i have been practicing setting and holding temps for real BBQing.
It is pretty amazing how efficient this thing is and how easy to control ! Just remember it does not need much air on the WSM!! ;)
